Elvis Bars- Grape Jelly Version

240g plain flour
1/2 teaspoon baking powder
200g salted butter, cold, diced
120g caster sugar
3/4 teaspoon ground cinnamon
90g whole rolled oats
220g grape jelly (or blackcurrant jam)
130g crunchy peanut butter
Filling
Directions
- Preheat oven to 170 degrees C. Line the base and sides of a 20cm square tin with baking parchment.
- Put the flour, baking powder, sugar, cinnamon and butter into a food processor and pulse until the mixture forms crumbs
- Tip into a bowl and add the rolled oats
- Spread half the mixture over the base of the tin, press down lightly and bake for 30 minutes until light brown.
- Allow to cool and firm up slightly then cover the base with the peanut butter (it will melt and be easier to spread with the heat from the base)
- Then spread the jelly/jam over the peanut butter.
- Pour the rest of the crumble mixture over the base and cook in the oven for 30minutes until light golden brown. They may need 5 minutes longer if too pale at this point.
- Leave to cool in the tin, and when cool cut into 12 bars
Peanut Butter, Blackcurrant Jam and Grated Apple

220g blackcurrant jam- Tesco finest is really good in this
130g crunchy peanut butter
1 apple, peeled and grated

- Tip into a bowl and add the rolled oats

- Then spread the jam over the peanut butter.
- Add the grated apple to the rest of the crumble mixture, tip over the base and cook in the oven for 30-40 minutes until golden brown. These take nearer 40 minutes.
- Leave to cool in the tin, and when cool cut into 12 bars
