These miniature masterpieces of the culinary world have captured the hearts and taste buds of food enthusiasts worldwide. With their delicate meringue shells, luscious fillings, and endless flavor possibilities, French Buttercream Macarons are a true embodiment of culinary artistry.

The Artistry Behind French Buttercream Macarons

Mastering the Macaron Shell

The foundation of any exceptional French Buttercream Macaron lies in its shell. Crafting the perfect macaron shell is an art that demands precision and patience. To achieve that coveted crisp exterior with a soft, chewy interior, a skilled pastry chef carefully combines almond flour, powdered sugar, and egg whites. The mixture is gently folded until it reaches the ideal consistency known as “macaronage.”

The Creamy Heart of the Macaron

What truly sets French Buttercream Macarons apart is the sumptuous filling nestled between the two delicate shells. While ganache and fruit preserves are common choices, it’s the French Buttercream that truly elevates these treats to a level of unparalleled decadence.

French Buttercream is a rich and velvety concoction created by whipping together egg yolks, sugar, and butter until it becomes luxuriously smooth. The result is a luscious, melt-in-your-mouth filling that complements the macaron shell’s texture perfectly.

A Symphony of Flavors

One of the most alluring aspects of French Buttercream Macarons is the vast array of flavors available. These little wonders can be customized to cater to virtually any palate. Whether you crave classic flavors like vanilla, chocolate, or raspberry, or you’re feeling adventurous with options like lavender, pistachio, or passion fruit, there’s a macaron for everyone.

The Joy of Seasonal Flavors

French Buttercream Macarons also embrace the seasons. With fresh fruits and seasonal ingredients, these treats take on a dynamic and ever-changing character. Imagine biting into a springtime macaron bursting with the flavor of ripe strawberries, or a winter delight infused with the warmth of cinnamon and nutmeg. Each season brings a new reason to savor these delectable confections.

The Perfect Pairing

French Buttercream Macarons aren’t just delightful on their own; they also make an exquisite companion to various beverages. The delicate sweetness of these macarons complements a wide range of drinks, from aromatic teas and rich coffees to sparkling wines and champagne. Whether you’re enjoying a quiet afternoon tea or celebrating a special occasion, French Buttercream Macarons add an elegant touch to any gathering.

Ingredients

  • Buttercream Filling
  • 2 Cups confectioners’ sugar

  • 6 oz Raspberries

  • 1 Tsp. vanilla extract

  • 1/2 Tsp. coconut extract (optional)

  • 2 Tablespoons coconut milk

  • 2 sticks salted butter, softened

  • 1 vanilla bean, seeds scraped out

  • Macarons
  • 1 3/4 Cups confectioners’ sugar

  • 1 1/4 Cups almond flour

  • 1/4 Cup coconut flour

  • 2/3 Cup egg whites

  • 3 T granulated sugar

  • 1-3 drops red or pink food coloring (optional)

Directions

  • For the Macarons
  • Preheat the oven to 300 degrees F using the convection setting. Line 3 baking sheets with silicone mats. Measure the confectioners’ sugar and almond flour by spooning them into measuring cups and leveling with a knife. Transfer to a bowl; whisk to combine.
  • Sift the sugar-almond flour mixture, a little at a time, through a fine-mesh sieve into a large bowl, pressing with a rubber spatula to pass through as much as possible. It will take a while, and up to 2 tablespoons of coarse almond flour may be left; just toss it
  • Beat the egg whites, cream of tartar and salt with a mixer on medium speed until frothy. Increase the speed to medium high; gradually add the superfine sugar and beat until stiff and shiny, about 5 more minutes.
  • Bake the first batch until the cookies are shiny and rise 1/8 inch to form a “foot,” about 20 minutes. Transfer to a rack to cool completely. Repeat, using a double sheet for each batch. Peel the cookies off the mats and sandwich with a thin layer of filling (see below).
  • For the Filling
  • Tint the batter with 2 drops neon pink gel food coloring; flavor with almond extract. Fill with seedless raspberry jam (you’ll need about 3/4 cup).
  • Use a clean piping bag to pipe the filling on top of the bottom cookie. Now place another cookie on top. Repeat with the remaining cookies and filling.
